Abstract
"MéTODO PARA A PRODUçãO DE CHOCOLATE, E, CHOCOLATE". A invenção refere-se a um método de produção de chocolate. O método compreende a adição de um agente emulsificante de chocolate, compreendendo pelo menos 10% em peso de um éster de ácido carboxílico de um diglicerídeo em uma massa de chocolate, o ácido carboxílico não sendo o ácido tartárico. A invenção também apresenta uma composição de chocolate composta de um agente emulsificante de chocolate, composto de pelo menos 10% de um éster de ácido carboxílico de um diglicerídeo, o ácido carboxílico não sendo o ácido tartárico. Essencialmente, o éster de ácido carboxílico de um diglicerídeo, na presente invenção, e um éster de ácido cítrico de um diglicerídeo, de preferência adicionado na massa de chocolate antes ou durante o concheamento.
