Abstract
"PROCESSO PARA A PRODUçãO DE UM PRECURSOR EM Pó PARA A PREPARAçãO DE UMA BEBIDA áCIDA MEDIANTE A MISTURAçãO DO PRECURSOR EM Pó COM UM LìQUIDO E BEBIDA áCIDA". Trata-se de um processo para a produção de um precursor reforçado para a preparação de uma bebida ácida mediante a misturação do precursor reforçado com um líquido, sendo que o processo que compreende as etapas de: (a) preparação de uma primeira pasta que compreende uma fonte de proteína e um estabilizante, sendo que a dita primeira pasta tem um pH neutro ou ácido; (b) ajuste do pH da primeira pasta, se necessário, a um valor na faixa de 2 a 6, de preferência de 3,5 a 4,2; e (c) secagem com aspersão da primeira pasta após a etapa (a) ou a etapa (b).
