Abstract
Способ получения мясных продуктов из цельномышечной ткани с непосредственным включением оливкового масла и максимально возможным замещением животного жира, обеспечиваемым путем добавления оливкового масла после экстракции мясных белков, растворимых в рассоле. Способ включает стадии: (а) галтовки мяса, инъецированного подходящим рассолом (из воды, соли, специй и т.д.) в галтовочном устройстве, (b) примешивания оливкового масла, (с) продолжения галтовки до полного включения оливкового масла, (d) набивания в оболочку, термообработки и упаковки продуктов. Продукты на основе мяса с включенным в них оливковым маслом, полученные настоящим способом, обладают превосходной стабильностью с точки зрения текстуры (консистенции) и сохраняют физико-химические свойства оливкового масла, содержащегося в этих продуктах.
