Abstract
PURPOSE: To prepare a processed eel having deliciousness of the spitchcocked eel as well as the storability and the deliciousness of eel pickled in sake lees, by pickling an eel broiled without any seasoning in sake lees at low temperature.
CONSTITUTION: A sake-lees pickling medium is prepared by mixing 100 parts by weight of sake lees, 5 parts of soy sauce, 5 parts of sweet sake, 5 parts of sake and 10 parts of sugar. Eels split and broiled without any seasoning and the sake-lees pickling medium are alternately put into a vessel and allowed to stand for about 1 week at about 3W5°C, and sterilized by RF-heating, etc.
