Abstract
Un objetivo de la presente invención es proporcionar un método para preparar fideos instantáneos, en donde los fideos instantáneos son excelentes en la propiedad de elaboración de fideos, textura y sabor salado y reducidos en sodio. En la preparación de los fideos instantáneos, con el fin de reducir la cantidad de sal usada para preparar fideos, 0.5 a 1.5 g de lactato de potasio sustituye a 1 g de sal que se añade al agua de amasado para preparar los fideos y así pueden prepararse los fideos instantáneos, los cuales son excelentes en la propiedad de elaboración de fideos, textura y sabor salado.
