Abstract

Det tilveiebringes en fremgangsmåte for å stabilisere lipidbestanddeler, hvor et protein-lipidemulgeringsprodukt blir fremstilt, og det isoelektriske punktet til emulgeringsproduktet blir bestemt. pH i emulsjonen blir justert under det isoelektriske punktet til proteinbestanddelen i emulsjonssystemet, for å fremstille et emulgeringsprodukt som har et total, positiv nettoladning. Lipidoksydasjonshastighetene til disse protein-stabiliserte emulsjonene er betydelig lavere ved denne pH-verdien enn hos dem over pI for proteinbestanddelen anvendt i emulsjonssystemet. Etter hvert som forskjellen mellom pH i emulsjonen og pI i proteinbestanddelen i emulsjonen økes, øker også hemmingen av lipidoksydasjon.
