Abstract
PRODUTOS ALIMENTìCIOS AERADOS, COMPOSIçãO PARA A OBTENçãO DE UM PRODUTO ALIMENTìCIO AERADO, COMPOSIçãO SECA PARA A OBTENçãO DE UM PRODUTO ALIMENTìCIO AERADO E USO DE UMA HIDROFOBINA Trata-se de um produto alimentício aerado que inclui hidrofobina. Também é apresentado o uso de uma hidrofobina em um método de inibição do engrossamento de bolhas em produtos alimentícios aerados.
