Abstract
Un procedimiento de fabricación de un producto alimentario deshidratado e inflado comprende la mezcla de un almidón alto en amilopectina e ingredientes alimentarios seleccionados para formar una masa; formar la masa en piezas; y exponer las piezas de masa a radiación de microondas a una presión inferior a la atmosférica para inflar y secar las piezas de masa, producir el producto alimentario deshidratado e inflado. Los ingredientes pueden incluir pasta de tomate, yogur, fruta o concentrado de jugo de fruta, puré de fruta, puré de verduras, concentrado de puré de verduras, café y sopa concentrada. La masa puede formarse en ausencia de hidrolizados de almidón. El procedimiento produce productos alimentarios deshidratados que incorporan una variedad de productos alimentarios en una matriz que tiene una estructura inflada y crujiente.
