Abstract
Винахід стосується способу виготовлення двокомпонентних морозивних продуктів, згідно з яким заморожену серцевину із морозива покривають жировмісною оболонкою. Спосіб виготовлення двокомпонентного морозива, згідно з яким поверхню замороженої серцевини із морозива охолоджують до температури нижче, принаймні -15° С, причому серцевину на певний час занурюють у жировмісний покривний розчин, щоб певна кількість розчину утворила покривний шар на серцевині, причому покривний розчин при зануренні серцевини має температуру від 0° С до 20° С, вміст жиру у покривному розчині становить від 10% до 18%, а одержаний шар має ступінь аерації від 0% до 30% відносно об'єму покривного розчину, потім поверхню одержаного продукту охолоджують до температури принаймні нижче -15° С для отвердіння жировмісного шару на поверхні серцевини із морозива.
