Abstract

"PRODUTO ALIMENTìCIO E PROCESSO PARA REDUZIR O TEOR DE óLEO E GORDURA EM ALIMENTOS COZIDOS". A presente invenção refere-se a um processo para cozer um alimento em óleo e/ou gordura. Uma mistura protéica seca, uma mistura protéica alcalina seca, uma mistura protéica aquosa alcalina, ou uma solução protéica aquosa ácida, é adicionada a um alimento antes do cozimento. A mistura protéica seca, a mistura protéica alcalina seca, a mistura protéica aquosa alcalina, e a solução protéica aquosa ácida, compreendem proteínas miofibrilares e proteínas sarcoplásmicas substancialmente isentas de miofibrilas e sarcómeros. A quantidade de óleo e/ou gordura absorvida pelo alimento durante o cozimento é substancialmente reduzida.
