Abstract

본 발명은 아스파탐을 함유하는 칼로리가 감소된 청량음료의 감미 및 맛의 보존방법에 관한 것이다. 상기 감미 및 맛은 0.1 내지 5%(W/V) 에이쓰리톨의 첨가에 의해 오랜 기간 저장후에도 보존된다. 질의 보존은 산성 또는 다소 산성 pH를 갖는 청량음료에서 특별하게 나타난다.

에리쓰리톨 및 아스파탐을 함유하는 칼로리가 감소된 청량음료.
본 내용은 요부공개 건이므로 전문내용을 수록하지 않았음
제1도는 본 발명의 실시예 2의 오렌지향 음료의 제조직후, 10명의 관능검사 요원에 의해 평가된 감미를 나타낸 그래프.
제2도는 제1도와 동일한 시료의 맛을 측정한 그래프이다.
제3도는 1개월을 저장한 후에 오렌지향 음료의 감미를 나타낸 그래프로서, 이 경우는 0.5 및 1%(W/V) 에리쓰리톨에 대해서도 측정하였다.

Claims (7)

  1. 에리쓰리톨의 양이 0.1 내지 5%(W/V), 바람직하게는 0.1 내지 3%(W/V)이고, 아스파탐의 양이 0.02 내지 0.09%(W/V)로 존재하는 것을 특징으로 하는 에리쓰리톨 및 아스파탐을 포함하는 칼로리가 감소된 청량음료.
  2. 에리쓰리톨 0.1~5%(W/V), 아스파탐 0.02~0.09(W/V), 소튬 벤조에이트, 아스코르빈산, 시트릭산 및 향료를 포함하는 조성을 갖는 것을 특징으로 하는 칼로리가 감소된 청량음료.
  3. 청량음료에 0.1~5%(W/V)의 에리쓰리톨이 첨가된 것을 특징으로 하는 아스파탐을 포함하는 칼로리가 감소된 청량음료의 맛 및 감미를 보존하는 방법.
  4. 제3항에 있어서, 상기 맛 및 감미가 대기온도 및 일광조건에서 적어도 1개월동안 보존됨을 특징으로 하는 방법.
  5. 에리쓰리톨을 사용하여 칼로리가 감소된 청량음료의 저장 안정성을 증가시키는 방법.
  6. 0.1~5%(W/V)의 에리쓰리톨을 사용하여 아스파탐을 포함하는 칼로리가 감소된 청량음료의 저장 안정성을 증가시키는 방법.
  7. 제5항 또는 제6항에 있어서, 상기 청량음료의 감미가 보존되고, 잡미가 발생하지 않는 것을 특징으로 하는 방법.
