Abstract
"COMPOSIçãO, USO DE UMA COMPOSIçãO, MéTODO PARA MANUFATURA DE UMA BEBIDA OU PRODUTO ALIMENTìCIO, PROCESSO PARA A MANUFATURA DE UMA COMPOSIçãO, E, BEBIDA OU PRODUTO ALIMENTìCIO". Um aspecto da presente invenção refere-se a uma composição, que compreende carboidrato caramelizado, cuja composição, quando dissolvida em água em um teor de sólidos seco de 0,1%, em peso, exibe: i. uma absorção a 280 nm (A~ 280~), que excede a 0,01, excede preferivelmente a 0,05, excede mais preferivelmente a 0,1 e de modo mais preferido excede a 0,3; e ii. uma razão de absorção A~ 280/560~ de pelo menos 200, preferivelmente de pelo menos 250. Outros aspectos da invenção referem-se a um método para a manufatura de uma bebida ou produto alimentício, que é resistente a alterações de sabor induzidas pela luz, o referido método compreendendo introduzir na referida bebida ou produto alimentício uma composição como acima definido; e a um processo para a manufatura da referida composição.
